It looks like there aren’t any online facsimiles (more info here): https://bestiary.ca/manuscripts/manu4890.htm. Apparently there are illustrations in the book Willene B. Clark’s Medieval Book of Birds: Hugh of Fouilloy’s Aviarium, pp. 27-87. It’s a shame it’s not more accessible.
